Ingredients:
8 medium sized pears
1/2 stick of butter (could sub coconut oil)
1/2 cup chopped walnuts
1/3 cup unsweetened flaked coconut
1/3 cup organic cane sugar or honey
1 tsp cinnamon
1 box raisins
Preheat oven to 325 degrees. Core the pears using a coring tool (I love those things). Stand them upright in a dish. Cover the bottom of the dish in a little bit of water.
In a bowl, crumb the butter, sugar, walnuts, coconut, and cinnamon. Add the raisins and mix well.
Stuff the pears with the mix, pressing the mixture down as you go. You should have just enough to fill all 8 pears.
Bake the pears for 20-30 minutes, or until they are soft. Let them cool. Serve as they are, or with homemade ice cream like we did. If you want to go the extra mile, heat up a batch of this fudge and pour it over the top. The more healthy fats, the better, right?! :)
