I was recently introduced to the magazine Living Without. I really like it! It has great info and recipes for people who are on an allergen free diet. I enjoy the articles, too. They keep me updated on things I need to know about GF eating, or new GF products. In their Aug/Sept '09 issue, they have recipes for dairy free, sugar free, gluten free ice creams you can make at home with an ice cream maker. We have tried the vanilla ice cream recipe, and the boys really loved it (especially on top of our peach cobbler!). Since it uses coconut milk, it does have a coconut flavor. If you don't prefer that taste, I'm sure adding cocoa powder or fruit to the mix would hide it quite well.
Vanilla Ice Dream (Living Without Magazine)
1/3 cup cold water
2 tsp unflavored gelatin or 3/4 tsp agar agar powder
1/4-1/2 cup honey (maple syrup would be good, too)
3 1/2 cups (2 14-ounce cans) unsweetened coconut milk (not lite)
1 TB (or less) pure vanilla extract
Place water in a small saucepan and slowly sprinkle with gelatin. Let stand for 2 minutes until gelatin softens and dry spots disappear. Warm mixture over medium-low heat without stirring until gelatin dissolves. Scrape mixture into a blender; cover and process until smooth.
Add 1/4 cup honey and salt and blend. Add coconut milk and vanilla, blending until smooth. For a sweeter taste, add additional honey and blend. Pour mixture into one or more wide-mouth mason jars. Cover and refrigerate for at least 6 hours before churning.
Scrape chilled custard into the ice cream maker canister and process according to instructions for your ice cream maker. After churning, chill in freezer for 3 hours or more. Soften from freezer by placing it in the fridge 30-45 min. before serving.
You can add anything to this recipe. Add fresh fruit, nuts, cocoa powder, or candy bits towards the end of churning. Or cover in your favorite fruit, chocolate, or caramel syrup when it's done.
