Raspberry Dreamsicle Ice Cream (DF)

I am really having a blast coming up with new stuff to use our ice cream maker for! Today I tweaked the lemon sherbert recipe from NT, and it tasted just like a dreamsicle (remember those?). If you don't like raspberry, you can use any other frozen fruit and it will work just fine. :)

2 cans coconut milk (not lite)
juice of 2 lemons
grated rind of 2 lemons
2 egg yolks (omit if you're not using farm fresh eggs)
1/2 cup maple syrup, honey, or a combo of both
1 cup frozen red raspberries (or other frozen fruit)

Blend all ingredients well in the blender. Chill for several hours, then process in the ice cream maker according to directions. Serve immediately, or chill in freezer after churning to firm up.

  1. After it was churned, the lemon flavor really came out in this recipe. So, if you're not a big fan of lemon, just skip the lemon rind and/or lemon juice. :)
